Schiff Hardin’s Bill Franzen had worked with Meg Sahs for years, advising her on estate and tax planning matters. Then Meg reached out to Bill for help on a new type of project: she was launching a new restaurant with business partner and celebrity chef Sarah Grueneberg.
Bill tapped Corporate partner Jon Jurva to create the duo’s LLC and then secure investor capital. Real Estate partner David Sattelberger helped find the right rental space and negotiate the lease. Intellectual Property partner Tom White continues to handle the team’s intellectual property matters, including trademarking the restaurant’s name, look, and proprietary line of pastas and sauces.
Monteverde Restaurant & Pastificio opened its doors in November 2015. Situated in Chicago’s famed West Loop, the hotly-anticipated restaurant has earned glowing reviews from outlets including the Chicago Tribune, Time Out Chicago, Chicago Magazine, and Eater Chicago.
